Instructions
- Line an 8-inch square pan with parchment and lightly oil it.
- Whisk the pectin into 1/4 cup of the sugar.
- Warm the pear puree in a heavy 3-quart saucepan to about 120°F, then whisk in the pectin mixture and bring to a boil, whisking constantly.
- Add the remaining 2 1/2 cups sugar and the corn syrup and return to a boil. Clip on a candy thermometer and cook, whisking often, until the mixture reaches 225°F and thickens noticeably, 8 to 12 minutes.
- Remove from the heat and quickly whisk in the citric acid solution and vanilla bean paste. Pour into the pan right away; it starts to set within a minute.
- Let set at room temperature until firm, at least 2 hours. Cut into 1-inch squares and toss in the coating sugar.
Tips
- Use yellow pectin (sold for pâte de fruits), not boxed jam pectin, which won't set these properly. Weigh the fruit and pectin if you can.
- Test your candy thermometer in boiling water first; it should read 212°F at sea level. If it's off, adjust the target temperature by the same amount. Above 1,000 feet, lower every target by about 2°F per 1,000 feet.
- Vanilla swap: pure vanilla extract works 1:1 in place of the paste; you'll just lose the specks.
- Best vanilla for this: Tahitian (floral, cherry, anise), or Madagascar (rich, creamy, classic). Any pure vanilla works.
- Storage: Store in a single layer in an airtight container at room temperature for up to 2 weeks.
