  • 1.0 cup (240.0 ml)fresh lemon juice
  • 1.0 cup (240.0 ml)water
  • 4.0 tspyellow pectin, about 12 g; see tip
  • 2 ¾ cups (550.0 g)granulated sugar, divided, plus 1/2 cup for coating
  • ⅓ cup (109.0 g)light corn syrup
  • ½ tspcitric acid, dissolved in an equal amount of water

Instructions

  1. Line an 8-inch square pan with parchment and lightly oil it.
  2. Whisk the pectin into 1/4 cup of the sugar.
  3. Warm the lemon juice and water in a heavy 3-quart saucepan to about 120°F, then whisk in the pectin mixture and bring to a boil, whisking constantly.
  4. Add the remaining 2 1/2 cups sugar and the corn syrup and return to a boil. Clip on a candy thermometer and cook, whisking often, until the mixture reaches 225°F and thickens noticeably, 8 to 12 minutes.
  5. Remove from the heat and quickly whisk in the citric acid solution. Pour into the pan right away; it starts to set within a minute.
  6. Let set at room temperature until firm, at least 2 hours. Cut into 1-inch squares and toss in the coating sugar.

Tips

  • Use yellow pectin (sold for pâte de fruits), not boxed jam pectin, which won't set these properly. Weigh the fruit and pectin if you can.
  • Test your candy thermometer in boiling water first; it should read 212°F at sea level. If it's off, adjust the target temperature by the same amount. Above 1,000 feet, lower every target by about 2°F per 1,000 feet.
  • Storage: Store in a single layer in an airtight container at room temperature for up to 2 weeks.
