Soft, golden shell-shaped pastries of lard shortcrust folded around a creamy filling of cooked semolina, ricotta, candied orange peel and cinnamon. Easier to make at home than the layered riccia, they bake up tender and crumbly with a light dusting of powdered sugar. Makes 14 pastries in about 5 hr 10 min.

Scales from a half to a double batch; give a bigger batch a little more time.
1 cup (250 ml)water
1 pinchsalt, for the filling
2 ½ oz (75 g)semolina, fine durum semolina
9 oz (250 g)whole-milk ricotta, drained overnight (sheep's milk if you can find it)
Make the filling: bring the water and pinch of salt to a boil, whisk in the semolina in a thin stream and cook, stirring, until very thick and pulling from the pan, 4 to 5 minutes. Spread on a plate, cover the surface with plastic and refrigerate until cold, about 1 hour.
Make the pastry: whisk the all-purpose flour, 150 g granulated sugar, baking powder, pinch of salt and lemon zest in a large bowl. Rub in the cold lard with your fingertips until it looks like fine crumbs.
Beat the egg with the honey, add it to the bowl and mix with a fork, then add the cold water a spoonful at a time, only until the dough holds together. Knead briefly into a smooth disc, wrap and refrigerate for 1 hour.
Finish the filling: press the whole-milk ricotta through a fine sieve, then beat in the cold semolina and 80 g granulated sugar until smooth. Mix in the egg yolk, candied orange peel and ground cinnamon. Refrigerate until needed, about 1 hour.
Heat the oven to 350°F (175°C) with racks in the upper and lower thirds. Divide the pastry into 14 pieces (about 55 g each).
On a lightly floured counter, roll each piece into an oval about 5 x 4 inches (13 x 10 cm) and 1/8 inch (3 mm) thick. Spoon about 2 tbsp (50 g) filling onto one half, fold the other half over and press the edges to seal, shaping it into a rounded shell. Trim the edge neatly with a knife and set 7 on each baking sheet.
Refrigerate the shaped pastries for 30 minutes so they hold their shape, then brush them with the beaten egg.
Bake until golden all over, 25 to 30 minutes, swapping the sheets halfway through. Cool for 10 minutes on the sheets, dust with powdered sugar and serve warm.
Tips
Lard gives the traditional tender, short texture; cold unsalted butter works but makes a richer, less crumbly pastry.
Drain the ricotta well, ideally overnight in a sieve in the fridge, or the filling will be loose and leak.
Do not overwork the pastry; knead just until smooth so it stays tender.
The filling contains a raw egg yolk and ricotta: keep it refrigerated until shaping and bake the pastries until golden so the filling is hot all the way through.

How long does it take to make sfogliatella frolla (neapolitan shortcrust shell)?
Plan on 60 minutes of prep and 30 minutes of cooking, plus 3 hours 40 minutes to chill and rest. The recipe makes 14 pastries.
How should I store sfogliatella frolla (neapolitan shortcrust shell)?
Best the day they are baked. Refrigerate leftovers, covered, for up to 3 days and rewarm at 325°F (165°C) for 8 minutes.
Can I make sfogliatella frolla (neapolitan shortcrust shell) ahead?
Yes. It needs time to chill and set, so it is a good one to make the day before you serve it.
The frolla is the smooth, shortcrust sister of Naples' layered sfogliatella riccia, made with a lard-enriched pasta frolla wrapped around the same semolina, ricotta and candied-peel filling. Serve it with espresso or caffè latte.
Variations
Mini frolle: divide the pastry into 28 pieces, use 1 tbsp (25 g) filling each and bake 18 to 20 minutes.
Cinnamon-sugar finish: dust the warm pastries with 2 tbsp (25 g) granulated sugar mixed with 1/2 tsp (1 g) ground cinnamon instead of powdered sugar.
Butter pastry: replace the lard with 2/3 cup (150 g) cold unsalted butter; bake time unchanged.
Make ahead: freeze the shaped, unbaked pastries on a tray and bag them; bake from frozen at 350°F (175°C) for 30 to 35 minutes.
