Romeu e Julieta is Brazil's beloved pairing of sweet, dense guava paste with slices of mild, slightly salty fresh Minas cheese. Here the guava is served two ways, in slices and as a warm glossy guava syrup spooned over the cheese. Makes 6 servings in about 28 minutes.

Scales from a half to a double batch; give a bigger batch a little more time.
10 ½ oz (300 g)guava paste (goiabada), divided
7 tbsp (100 ml)water
1 tsp (5 ml)lime juice
12 ½ oz (360 g)fresh Minas cheese (queijo minas frescal), well chilled
Cut 150 g of the guava paste (goiabada) into 6 neat slices about 3/8 inch (1 cm) thick. Cut the remaining 150 g into small cubes.
Put the guava cubes and the water in a small saucepan over medium-low heat. Cook, stirring and pressing the cubes with a spoon, until they melt into a smooth, glossy syrup, 5 to 8 minutes. Stir in the lime juice.
Take the syrup off the heat and let it cool for 10 minutes so it is warm, not hot; it will thicken slightly as it stands.
Meanwhile, cut the fresh Minas cheese into 6 slices about 3/4 inch (2 cm) thick and pat them dry with paper towels.
Place a cheese slice on each plate and lay a guava slice on top or alongside it.
Spoon the warm guava syrup over and around the cheese and serve right away, while the syrup is warm and the cheese is still cool.
Tips
Use firm goiabada that slices cleanly; homemade goiabada cascão works beautifully.
If you cannot find fresh Minas cheese, use another mild, fresh, slightly salty white cheese such as queso fresco.
If the syrup thickens too much as it stands, warm it with 1 tbsp (15 ml) water.
Good with brazilian coffee (cafezinho).
