Small open pastries of thin semolina dough pinched into a star around a mound of ricotta filling flavored with saffron, lemon and orange zest. The filling puffs and turns golden in the oven, giving a soft, cheesecake-like center inside a crisp crown of pastry. Makes 20 pastries in about 2 hr 25 min.

Scales from a half to a double batch; give a bigger batch a little more time.
1 ¼ cups (150 g)all-purpose flour
3 ½ oz (100 g)fine durum semolina, semola rimacinata
1 oz (25 g)lard, softened
1 pinchsalt
½ cup (115 ml)water, room temperature
1 lb (500 g)whole-milk ricotta, sheep's milk if available
1 pinchsaffron threads, about 0.15 g
1 tbsp (15 ml)warm water, 1 tbsp
½ cup (90 g)granulated sugar
1(50 g)egg, large
1 ½ oz (40 g)fine semolina for the filling
2 tsp (4 g)lemon zest, finely grated, from 1 lemon
2 tsp (4 g)orange zest, finely grated, from 1/2 orange
Drain the whole-milk ricotta in a fine sieve set over a bowl in the refrigerator for at least 1 hour. Crumble the saffron threads into the warm water and let them steep at the same time.
Make the dough: mix the all-purpose flour, fine durum semolina and salt, rub in the softened lard, then add the water gradually and knead until smooth, firm and elastic, about 8 minutes. Wrap and rest at room temperature while the ricotta drains, about 30 minutes.
Make the filling: press the drained ricotta through the sieve into a bowl. Beat in the granulated sugar, egg, saffron with its soaking water, lemon zest and orange zest, then stir in the fine semolina for the filling and the baking powder until evenly golden and thick.
Heat the oven to 350°F (175°C) and line the baking sheets with parchment.
Roll the dough very thin, about 1/16 inch (1.5 to 2 mm), and cut twenty 3 1/2-inch (9 cm) rounds, re-rolling scraps once.
Place a heaping tablespoon of filling, about 35 g, in the center of each round. Lift the edge of the dough up around the filling and pinch it at 5 or 6 points so the pastry forms a star-shaped cup with the filling showing in the middle. Space them 1 inch (2.5 cm) apart on the sheets.
Bake, swapping the sheets halfway, until the filling is puffed and golden with light brown spots and the pastry is pale gold and crisp, 25 to 30 minutes.
Cool on the sheets for 10 minutes, then on a rack until room temperature. Dust with the powdered sugar before serving.
Tips
Draining the ricotta keeps the filling thick enough to hold its mound; skip it and the filling spreads and weeps.
Pinch the points firmly so they do not open in the oven; a dab of water helps them stick.
Sheep's milk ricotta gives the traditional tangy flavor; whole-milk cow's ricotta works well too.
The ricotta-and-egg filling must bake until puffed and set, reaching 160°F (71°C) in the center; refrigerate the pastries within 2 hours of cooling.
