Instructions

  1. Roughly crush the peanut brittle into small pieces.
  2. Add 1/2 cup whole milk to a blender, followed by 2 cups chocolate ice cream.
  3. Add 1 tbsp chocolate syrup, 1/2 tsp pure vanilla extract, and the peanut brittle pieces.
  4. Blend on low for 10 seconds, then on medium-high for 20–30 seconds, just until smooth but with some texture from the brittle. Avoid overblending.
  5. Check consistency. Add 1 tablespoon milk at a time if too thick, or 1/4 cup additional ice cream if too thin.
  6. Pour into a chilled 16-ounce glass and top with 2 tbsp whipped cream and 1 tsp chocolate shavings.
  7. Serve immediately with a wide straw and long spoon.

Tips

  • For extra crunch, stir in some peanut brittle pieces after blending instead of blending all together. You can substitute almond brittle if desired.
