Instructions
- In a medium heavy saucepan, combine whole milk, heavy cream, granulated sugar, cocoa powder, and the scraped seeds and pod of the vanilla bean. Warm over medium heat, stirring frequently, until the sugar dissolves and the mixture is hot but not boiling, about 5-7 minutes.
- Remove from heat and whisk in the chopped bittersweet chocolate until fully melted and smooth. Let the mixture cool slightly.
- In a medium bowl, whisk the egg yolks with the fine sea salt until smooth and slightly thickened.
- Gradually ladle about 1 cup (240 ml) of the warm chocolate mixture into the egg yolks while whisking constantly to temper the yolks.
- Pour the tempered yolk mixture back into the saucepan with the remaining chocolate base.
- Cook over low heat, stirring constantly with a wooden spoon or spatula, until the custard thickens enough to coat the back of the spoon and reaches 170-175°F (77-79°C). Do not boil.
- Strain the custard through a fine mesh sieve into a clean bowl to remove the vanilla pod and any cooked egg bits.
- Cover the custard with plastic wrap pressed directly on the surface to prevent a skin from forming. Refrigerate until thoroughly chilled, at least 2 hours or overnight.
- Once chilled, churn the custard in an ice cream maker according to the manufacturer's instructions until it has a soft, creamy gelato consistency, about 20-30 minutes.
- Transfer the gelato to an airtight container and freeze for about 30 minutes to firm up before serving.
