Instructions
- Add the flour, eggs, whole milk, melted butter, granulated sugar, fine sea salt, the scraped seeds of 1 vanilla bean, and fresh orange zest to a blender.
- Blend on medium speed until the batter is smooth and light, about 30 seconds. Scrape down the sides if needed and blend briefly again.
- Heat an 8-inch nonstick skillet over medium heat. Lightly butter the skillet.
- Pour about 1/4 cup (60 ml) of batter into the skillet and tilt the pan to coat the bottom evenly with a thin layer.
- Cook until the edges lift easily and the bottom is lightly golden, about 1 to 2 minutes. Flip carefully and cook the other side for 30 seconds to 1 minute.
- Transfer cooked crêpes to a plate and loosely cover with foil to keep warm. Repeat with remaining batter, buttering pan as needed.
- In a medium bowl, whip the heavy cream with powdered sugar and scraped vanilla bean seeds until soft peaks form; chill the vanilla citrus cream for about 20 minutes.
- Serve crêpes filled with a spoonful of the chilled vanilla citrus cream, folding or rolling as desired.
- Optionally garnish with additional orange zest or a dusting of powdered sugar.
Tips
- Use fresh vanilla bean seeds in both batter and cream to layer the vanilla flavor beautifully.
- Make sure the skillet is hot enough but not smoking for even, thin crêpes that cook quickly without tearing.
