English walnuts are the common kind; black walnuts are stronger and more expensive. The papery skin gives walnuts their faint bitterness. Toasting at about 350°F (175°C) for 7 to 10 minutes makes them crunchier and more mellow.

Walnuts are high in oil and go rancid quickly, so store them in the refrigerator or freezer.
