Also called: baking chocolate, bitter chocolate
Unsweetened chocolate, also called baking chocolate, is chocolate liquor that has been molded into bars. It is roughly half cocoa butter and half cocoa solids, which gives baked goods a deep, strong chocolate flavor. It is far too bitter to eat on its own.
It is used in brownies, fudge, chocolate cakes and frostings, where the recipe adds its own sugar. It should be melted gently over low heat or in short bursts in the microwave, since it scorches easily. It cannot be swapped one-to-one with bittersweet chocolate without adjusting the sugar.
