Pineapple
A sweet-tart tropical fruit used fresh, canned or cooked in cakes, tarts and desserts such as pineapple upside-down cake.

- Baking ingredients and additives
Fresh pineapple contains bromelain, an enzyme that breaks down proteins, so it stops gelatin from setting and can make dairy taste bitter. Cooking or canning destroys the enzyme, which is why canned pineapple works in gelatin desserts.
Pineapple upside-down cake is the classic American use: rings are caramelized with brown sugar and butter in the pan, then a cake batter is baked on top and flipped.
