In Belgium, the word praline refers to a filled chocolate rather than a sugared nut. Chocolate is tempered and poured into molds to form thin shells, which are filled with ganache, praliné hazelnut paste, gianduja, butter cream, marzipan or liqueur, and then capped with chocolate. Some fillings are firm, while others are soft or nearly liquid.

Belgian pralines date to the early twentieth century and are now one of the country's best-known foods, sold by weight in elegant boxes. Shapes, decorations and marbled shells signal the different fillings, and chocolatiers take great pride in their signature assortments.
