Oil temperature

Heat 2–3 inches of neutral oil in a heavy pot to 350–365°F (175–185°C) and clip a thermometer to the side. Too cool and the doughnuts absorb oil; too hot and they brown before the inside cooks.

Step by step

  • Lower doughnuts in gently, a few at a time
  • Fry about 1 minute per side for yeast doughnuts, until golden
  • Flip once with a spider or chopsticks
  • Let the oil return to temperature between batches
  • Drain on a wire rack set over a sheet pan

Never leave hot oil unattended, keep a lid nearby to smother any flare-up, and never add water to hot oil.
