Instructions

  1. Split the vanilla bean lengthwise with a paring knife and scrape out the seeds with the back of the blade.
  2. Warm the honey in a small saucepan over low heat just until it's runny; don't let it bubble.
  3. Stir in the vanilla seeds and add the pod.
  4. Pour into a clean jar, seal, and let it infuse at room temperature for 1 week.
  5. Remove the pod, or leave it in for stronger flavor. Store at room temperature.
