Instructions
- In a medium saucepan, combine whole milk, heavy cream, half the sugar, skim milk powder, fine sea salt, vanilla bean seeds and pod, and vanilla bean paste. Heat gently over medium heat, stirring occasionally, until hot and steamy with bubbles forming around the edge, about 170°F (77°C). Remove from heat and let steep for 20 minutes for full vanilla infusion.
- Whisk the egg yolks with the remaining sugar in a heatproof bowl until thickened and pale.
- Remove and discard the vanilla pod from the milk mixture. Gradually temper the egg yolks by slowly whisking in about half of the warm milk mixture.
- Return the egg yolk and milk mixture back to the saucepan and cook gently over low heat, stirring constantly, until the custard thickens and coats the back of a spoon, reaching 175°F (79°C). Do not boil to avoid curdling.
- Pass the custard through a fine sieve into a clean bowl to ensure smoothness. Cool to room temperature while stirring occasionally to prevent a skin from forming.
- Cover and refrigerate the custard for at least 2 hours or preferably overnight to fully chill and develop flavors.
- Pour the chilled custard into your ice cream maker and churn according to the manufacturer's instructions until it reaches a soft gelato consistency, about 30-40 minutes.
- Transfer the gelato to a shallow airtight container and freeze for at least 45 minutes to set before serving.
- Serve the gelato slightly softened; garnish optionally with fresh vanilla bean specks or a light dusting of vanilla powder for an elegant finish.
