Trigona Panoramatos (Phyllo Custard Triangles)
Crisp, many-layered phyllo triangles are baked golden, dipped in light vanilla syrup, then hollowed and piped full of cold vanilla custard. The contrast of shattering syrupy pastry and cool cream is what Thessaloniki's Panorama is famous for. Makes 18 pieces in about 11 hr.

Baking tools for this recipe

Instructions

  1. Make the custard first so it can chill: in a saucepan whisk the 120 g granulated sugar, cornstarch and all-purpose flour, then whisk in a little of the whole milk until smooth, followed by the egg yolks and the rest of the milk. Cook over medium heat, whisking constantly, until thick, bubbling for 1 minute and at least 160°F (71°C), 8 to 10 minutes.
  2. Off the heat, whisk in the 40 g unsalted butter and the vanilla extract. Press plastic wrap onto the surface, cool, about 1 hour, then refrigerate until cold and firm, at least 3 hours.
  3. Make the syrup: boil the 400 g granulated sugar, water, light corn syrup and split vanilla bean for 8 minutes, stirring until the sugar dissolves. Stir in the lemon juice, remove the vanilla bean and let cool to room temperature, about 1 hour.
  4. Heat the oven to 350°F (175°C). Keep the phyllo dough covered with a damp towel. Cut each sheet lengthwise into 3 strips about 4 1/2 inches (11 cm) wide.
  5. Brush one strip with the 150 g melted unsalted butter, lay a second strip on top and brush again. Fold one bottom corner up to the opposite edge to make a triangle, then keep folding the triangle up the strip, flag-style, to the end. Brush with butter and set on a lined sheet. Repeat to make 18 triangles.
  6. Bake until deep golden and crisp all through, 25 to 30 minutes.
  7. While the triangles are hot, dip them 2 or 3 at a time into the cool syrup for 30 to 60 seconds, then lift out and drain on a rack, open edge down, until cool, about 30 minutes.
  8. With small scissors, snip open the top edge of each triangle and pull out a little of the inner pastry to make a pocket. Beat the cold custard briefly until smooth, spoon it into a piping bag and fill each triangle generously.
  9. Dust lightly with the powdered sugar and serve right away, or refrigerate up to 4 hours before serving.

Tips

  • Fold the triangles snugly so the layers stay tight, but do not press them flat; the inner layers need room to puff so you can hollow them later.
  • Bake until truly deep golden: pale phyllo goes soft once dipped in syrup.
  • Fill on the day you serve; the baked, syruped triangles keep crisp in an airtight tin for 1 day before filling.
  • Cook the custard until it bubbles and reaches at least 160°F (71°C), and keep the filled pastries refrigerated.

Recipe FAQ

How long does it take to make trigona panoramatos (phyllo custard triangles)?

Plan on 50 minutes of prep and 40 minutes of cooking, plus 9 hours 30 minutes to chill and rest. The recipe makes 18 pieces.

How should I store trigona panoramatos (phyllo custard triangles)?

Filled triangles: refrigerate and eat the same day. Unfilled baked and syruped triangles: airtight at room temperature up to 1 day. Custard: refrigerate up to 2 days.

Can I make trigona panoramatos (phyllo custard triangles) ahead?

Yes. It needs time to chill and set, so it is a good one to make the day before you serve it.

Can I use a different form of vanilla?

Yes. This recipe uses 1 tsp vanilla extract (5 ml). Each teaspoon of pure vanilla extract can be swapped for 1 teaspoon of vanilla bean paste, the seeds of half a vanilla bean, or 1/2 teaspoon of vanilla powder. Paste and seeds add the classic dark specks.

Named for Panorama, the hillside suburb above Thessaloniki where families have gone for them for more than 50 years, these buttered phyllo triangles are baked, dipped in syrup and filled with chilled custard. Serve it with greek coffee or iced freddo espresso.

Variations

  • Mini portions: cut each sheet into 6 strips about 2 1/4 inches (5.5 cm) wide to make 36 small triangles, bake 15 to 18 minutes and fill each with about 1 1/2 tbsp custard.
  • Cinnamon-sugar finish: dust the filled triangles with 1 tbsp (8 g) powdered sugar mixed with 1/2 tsp (1 g) ground cinnamon instead of plain powdered sugar.
  • Lighter cream: whip 1/2 cup (120 ml) heavy cream to soft peaks and fold it into the cold custard before piping.
