Scales from a half to a double batch; give a bigger batch a little more time.
1 ¼ cups (250 g)granulated sugar, for the syrup
1 ¼ cups (300 ml)water
½ cup (170 g)honey
1 tbsp (15 ml)lemon juice
3 ⅓ cups (400 g)walnuts, finely chopped
¾ cup (100 g)blanched almonds, finely chopped
⅓ cup (30 g)plain dry breadcrumbs
¼ cup (50 g)granulated sugar, for the filling
1 ½ tsp (4 g)ground cinnamon
1 pinchground cloves
¼ cup (60 g)unsalted butter, melted, for the filling
1 lb (454 g)phyllo dough, thawed, about 20 sheets 13 x 18 inches (33 x 46 cm)
¾ cup (170 g)unsalted butter, melted, for the pastry
Make the syrup first: boil the 250 g granulated sugar, water, honey and cinnamon stick for 5 minutes, stirring until the sugar dissolves. Stir in the lemon juice, remove the cinnamon stick and cool completely, about 1 hour.
Heat the oven to 350°F (175°C) and butter the pan. For the filling, mix the walnuts, blanched almonds, plain dry breadcrumbs, 50 g granulated sugar, ground cinnamon and ground cloves, then stir in the 60 g melted unsalted butter.
Unroll the phyllo dough and keep it covered with a damp towel. Cut the stack crosswise into 3 strips about 6 inches (15 cm) wide.
Take 2 strips, brushing each with the 170 g melted unsalted butter as you stack them. Spoon a generous tablespoon of filling (about 22 g) in a line along the short end, leaving 1/2 inch (1 cm) at the sides.
Fold the short end over the filling, fold in the long sides, and roll up firmly into a cigar about 4 inches (10 cm) long. Set seam side down in the pan, snugly against the next roll. Repeat with the remaining phyllo and filling to make about 30 rolls.
Brush the tops generously with the remaining butter and sprinkle a few drops of water over them to keep the phyllo from curling.
Bake until deep golden brown and crisp, 35 to 40 minutes.
Right out of the oven, pour the cooled syrup evenly over the hot rolls. Let them stand uncovered at room temperature at least 4 hours to absorb the syrup before serving.
Tips
Pack the rolls tightly in the pan so they hold their shape and soak up the syrup evenly.
Work with a few strips at a time and keep the rest covered; dry phyllo cracks when rolled.
Cool syrup on hot pastry keeps the rolls crisp outside and moist inside.
Good with greek mountain tea.

One of the Greek siropiasta (syrup-soaked sweets), saragli fills buttered phyllo with spiced walnuts and almonds and rolls it into individual cigars, an easy-to-serve alternative to pan baklava. Serve it with greek mountain tea.
Variations
Mini portions: cut the phyllo into strips about 3 inches (8 cm) wide, use 2 tsp (about 11 g) filling each to make about 60 small rolls, and bake 25 to 30 minutes.
Cinnamon-sugar finish: mix 1 tbsp (12 g) sugar with 1 tsp (2 g) ground cinnamon and dust it over the syruped rolls once cooled.
Pistachio saragli: replace the almonds with 1 cup (100 g) chopped pistachios; bake time unchanged.
Orange syrup: use 1 tbsp (15 ml) orange juice in place of the lemon juice in the syrup.
