Instructions
- Combine the raspberries, water and sugar in a medium saucepan.
- Bring to a boil over medium-high heat, stirring until the sugar dissolves.
- Lower the heat and simmer for 8 to 10 minutes, mashing the berries against the pan, until they fall apart.
- Remove from the heat and let stand for 15 minutes.
- Strain through a fine-mesh sieve, pressing gently with the back of a spoon; pressing hard makes the syrup cloudy.
- Stir in the lemon juice and vanilla, cool and refrigerate in a clean bottle.
