  • 2.0 (360.0 g)ripe pears (Bartlett or Bosc), cored and diced
  • 1.0 cup (240.0 ml)water
  • ¾ cup (150.0 g)granulated sugar
  • ½vanilla bean, split and scraped
  • 1.0 tsp (5.0 ml)fresh lemon juice

Instructions

  1. Combine the pears, water, sugar and vanilla bean seeds and pod in a medium saucepan.
  2. Bring to a boil over medium heat, stirring until the sugar dissolves.
  3. Lower the heat and simmer gently for 15 minutes, until the pears are very soft.
  4. Remove from the heat, cover and steep for 30 minutes.
  5. Strain through a fine-mesh sieve, pressing firmly on the pears; discard the pod.
  6. Stir in the lemon juice, cool and refrigerate in a clean bottle.

Tips

  • The riper and juicier the pears, the stronger the syrup.
  • For a spiced version, simmer a cinnamon stick and 2 whole cloves with the pears.
