Scales from a half to a double batch; give a bigger batch a little more time.
6 tbsp (90 ml)neutral oil
2 oz (60 g)shallots, thinly sliced
1 ¼ lb (600 g)taro, peeled and cut into 1-inch (2.5 cm) cubes
⅔ cup (150 ml)water, for the taro paste
⅔ cup (120 g)sugar, for the taro paste
1 pinchsalt, for the taro paste
10 ½ oz (300 g)kabocha pumpkin, peeled, seeded and cut into 1-inch (2.5 cm) cubes
¾ oz (20 g)sugar, for the pumpkin
½ cup (60 g)cooked ginkgo nuts, vacuum-packed, about 24
Make the shallot oil: heat the neutral oil and shallots in a small pan over medium-low heat, stirring often, until the shallots are light golden, 8 to 10 minutes. Strain the oil and cool; set the shallots aside for another dish.
Steam the taro cubes over high heat until very soft and easily crushed with a fork, 25 to 30 minutes. Steam the kabocha pumpkin cubes alongside, on a separate plate, until tender, 12 to 15 minutes, and remove them first.
While the taro steams, simmer the cooked ginkgo nuts with the 120 ml water and 40 g sugar in a small pan over low heat for 10 minutes; keep them in the syrup.
Mash the hot taro, then blend or press it through a sieve with the 150 ml water until very smooth.
Heat 60 ml of the shallot oil in a wok or nonstick pan over medium-low heat. Add the taro purée, 120 g sugar and a pinch of salt and cook, stirring and folding constantly, until glossy, smooth and pulling away from the pan, 10 to 12 minutes. Add a spoonful of water if it gets too stiff.
Mash the pumpkin with the 20 g sugar into a smooth purée and warm it in a small pan over low heat, stirring, 2 to 3 minutes.
Warm the coconut milk with a pinch of salt over low heat until steaming, about 2 minutes; do not let it boil.
Spoon the warm taro paste into 6 small bowls, top each with pumpkin purée and about 4 drained ginkgo nuts, then spoon a little coconut milk and a few drops of the remaining shallot oil over the top. Serve warm.
Tips
Use mature, floury taro: it mashes into a smooth paste, while waxy taro turns gluey.
Shallot oil is the traditional richness here; lard is used in older Teochew versions.
Contains coconut; check with your doctor if you avoid tree nuts.
Ginkgo nuts must be cooked and eaten in moderation, about 4 per serving for adults; do not serve them to young children. Taro must be fully cooked before eating.

Pumpkin cubes: instead of purée, toss the steamed pumpkin cubes in 20 g (1 1/2 tbsp) sugar melted with 2 tbsp (30 ml) water for 2 minutes and pile them on top.
Without ginkgo: leave out the ginkgo nuts and their syrup; cook time unchanged.
Chilled orh nee: refrigerate the taro paste at least 2 hours and serve cold with chilled coconut milk.
