Instructions

  1. Mix crust flour and salt, cut in cold butter, moisten with exactly 65 ml ice water and chill dough 30 minutes.
  2. Roll crust into a 23 cm pie dish; crimp and refrigerate 15 minutes. Heat oven to 350°F (177°C).
  3. Whisk eggs, syrup, sugar, melted butter, vanilla and salt until blended; mix in any listed additional flavor ingredients.
  4. Fold in all shelled pistachios, pour into the cold pastry and spread evenly.
  5. Bake 50–60 minutes, protecting crust edges as needed, until center is only slightly wobbly and reaches at least 160°F (71°C).
  6. Let cool for 3 hours, then cut with a clean sharp knife. Cover and refrigerate leftovers.

Tips

  • If using nuts with thin skins, toast first for a deeper, less raw flavor.
  • Avoid cutting hot: warm syrup fillings require several hours to set.
