A tall drift of fluffy shaved ice soaked with homemade mango syrup and buried under a heap of sweet diced mango, condensed milk and a scoop of mango sorbet. It depends entirely on very ripe, fragrant mangoes. Makes 4 servings in about 1 hr 25 min.

Scales from a half to a double batch; give a bigger batch a little more time.
¾ cup (200 g)ripe mango flesh, puréed, for the mango syrup
⅓ cup (60 g)granulated sugar
¼ cup (60 ml)water
1 tbsp (15 ml)lemon juice
6 ½ cups (900 g)ice cubes, or frozen water blocks for a block shaver
1 lb (500 g)ripe mangoes flesh, cut into 1/2-inch (1.5 cm) dice, chilled, for the topping
For the mango syrup, simmer the puréed ripe mango flesh, granulated sugar and water in a small saucepan, stirring, until the sugar dissolves and the syrup is glossy, 3 to 5 minutes. Stir in the lemon juice.
Cool the syrup, then refrigerate until cold, about 1 hour. Chill four wide serving bowls in the freezer at the same time.
Just before serving, shave the ice cubes on the finest setting of an ice shaver into the chilled bowls, building a tall, loose mound of about 225 g ice in each.
Spoon about 3 tbsp of the cold mango syrup over each mound so it soaks in.
Pile the diced ripe mango flesh over and around the ice, dividing it evenly.
Spoon about 30 g sweetened condensed milk over each bowl, set a scoop of mango sorbet on top and serve immediately.
Tips
Use the ripest, most fragrant mangoes you can find; Irwin or Ataulfo types are closest to Taiwan's.
Freeze filtered water in shallow containers or the shaver's molds for 10 to 12 hours if your machine takes blocks; blocks shave finer than cubes.
Work quickly and keep everything cold: shaved ice starts melting within minutes.
Good with iced oolong tea.

Serve at once; shaved ice cannot be stored. Keep leftover mango syrup and diced mango covered in the refrigerator up to 2 days.
Can I make mango shaved ice (taiwanese mango bing) ahead?
Yes. It needs time to chill and set, so it is a good one to make the day before you serve it.
Mango shaved ice is Taiwan's signature summer dessert, built from a mound of finely shaved ice piled with ripe diced mango, mango syrup, sweetened condensed milk and often a scoop of mango sorbet. Serve it with iced oolong tea.
Variations
Snowflake mango ice: shave a frozen milk block (see Taiwanese Snowflake Ice) instead of plain ice and cut the condensed milk to 60 g; time unchanged.
Mango and panna cotta: top each bowl with a small cube of vanilla panna cotta (about 60 g) instead of the sorbet; time unchanged.
Passion fruit syrup: replace the lemon juice with 30 ml strained passion fruit juice for a tangier syrup; time unchanged.
Make-ahead syrup: the mango syrup keeps 3 days in the refrigerator, cutting serving-day work to 10 minutes.
