Baking tools for this recipe

Instructions

  1. Soak the raisins and candied peel in the warm orange juice for 15 minutes, then drain well and pat dry.
  2. Mix the flour, yeast, sugar, salt and zest. Add the milk, egg and melted butter and knead 8 minutes into a smooth dough, then knead in the drained fruit.
  3. Cover and let rise 1 to 1.5 hours until doubled.
  4. Roll the dough into an oval about 28 x 20 cm (11 x 8 inches). Lay the almond paste log along the center.
  5. Fold the dough over the paste and pinch the seam to seal. Set seam-side down on a parchment-lined sheet.
  6. Cover and let rise 30 to 40 minutes until puffy. Heat the oven to 350 F (175 C).
  7. Bake 35 to 40 minutes until deep golden and an instant-read thermometer reads 190 F (88 C).
  8. Brush with the butter twice, 5 minutes apart, then dust heavily with powdered sugar once cool enough to handle.

Tips

  • Dry the soaked fruit well; wet fruit makes dough sticky and can leak.
  • Keep the almond paste centered so it does not burst the seam.
  • Cover the loaf loosely with foil if it browns too fast.
  • Good with hot coffee or tea.
