Baking tools for this recipe

Instructions

  1. Lightly oil an 8-inch square pan or line it with parchment.
  2. Combine the guava puree, sugar and lemon juice in a wide heavy pot (4-quart) and stir over medium heat until the sugar dissolves.
  3. Bring to a gentle bubble, then lower the heat to medium-low. Stir every minute or two with a long wooden spoon; the mixture will spit, so keep a lid nearby to deflect.
  4. Cook for 45 to 60 minutes, stirring more often as it thickens, until it darkens to brick red and a spoon dragged across the bottom leaves a clear trail that closes slowly. It should reach about 220 F (104 C).
  5. Pour into the pan, smooth the top and cool uncovered for 30 minutes.
  6. Cover and refrigerate at least 4 hours until completely firm, then turn out and cut into slices or squares.

Tips

  • Use a wide pot so moisture evaporates quickly.
  • Wear long sleeves; hot guava splatters.
  • Serve with fresh cheese, which Brazilians call Romeu e Julieta.
  • Hot sugar paste can burn badly; keep face and arms back from splatter. Refrigerate the finished paste; it is not shelf-stable.
