Gianduiotti are small chocolates shaped like upturned boats, made from gianduja, a silky blend of roasted hazelnut paste, sugar and dark chocolate. They melt almost instantly on the tongue and taste as much of toasted hazelnut as of cocoa. Makes 48 pieces in about 3 hr.

Scales from a half to a double batch; give a bigger batch a little more time.
1 ½ cups (180 g)hazelnuts, skin on, Piedmont Tonda Gentile if possible
1 cup (120 g)powdered sugar, sifted
1 pinchfine salt
9 oz (250 g)dark chocolate, 60 to 70% cocoa, finely chopped
Heat the oven to 325°F (165°C). Toast the hazelnuts on a baking sheet until golden inside and fragrant, 12 to 15 minutes. Rub them in a towel while warm to remove the skins and let cool until just warm, about 30 minutes.
Grind the warm hazelnuts in a food processor, scraping down often, until they turn into a smooth, runny paste, 5 to 8 minutes. Add the powdered sugar and fine salt and process 2 to 3 minutes more until completely smooth.
Melt two-thirds (165 g) of the dark chocolate in a heatproof bowl over barely simmering water until it reaches 113 to 122°F (45 to 50°C). Take it off the heat, add the remaining chocolate and stir until melted, then stir in the hazelnut paste until glossy.
Temper the gianduja: stir it in the bowl, setting the bowl in a larger bowl of cool water for short spells, until it cools to 79°F (26°C). Lift it out and warm it gently over the hot water for a few seconds at a time to 84°F (29°C). A smear on parchment should set glossy and firm within 5 minutes.
Let the tempered gianduja stand at cool room temperature, stirring every few minutes, until it thickens to the texture of soft frosting and just holds a shape, 10 to 20 minutes.
Spoon it into a piping bag fitted with a 3/4-inch (2 cm) plain tip. Pipe long, thick strips onto parchment, then pinch each strip along its length with an offset spatula into a triangular ridge with a flat base, like an upturned boat.
Leave the strips at cool room temperature, about 60 to 65°F (16 to 18°C), until firm enough to slice cleanly, about 1 hour. Cut into 1 1/4-inch (3 cm) pieces with a knife dipped in hot water and dried, angling the ends slightly.
Let the gianduiotti set fully for 2 more hours before wrapping each one in foil.
Tips
Grind the hazelnuts until truly liquid; a gritty paste gives a grainy chocolate.
Gianduja sets at a lower temperature than plain dark chocolate because of the hazelnut oil, so it stays soft longer; be patient during the thickening step.
If the strips are too soft to pipe into ridges, refrigerate them for 10 minutes and shape again.
Good with espresso or a bicerin-style coffee with chocolate.

How should I store gianduiotti (turin hazelnut chocolates)?
Keep wrapped in an airtight tin at cool room temperature, 60 to 68°F (16 to 20°C), away from light for up to 1 month; do not refrigerate long-term or they bloom.
Can I make gianduiotti (turin hazelnut chocolates) ahead?
It is at its best the day it is made; prepare it a few hours before serving.
Gianduiotti were launched in Turin at the 1865 Carnival and named after the mask Gianduja; Turin chocolatiers stretched scarce cocoa with finely ground Piedmont Tonda Gentile hazelnuts, and the classic formula is just hazelnuts, sugar and cocoa, with at least 30 percent hazelnut. Serve it with espresso or a bicerin-style coffee with chocolate.
Variations
Bite-size pieces: cut the strips into 3/4-inch (2 cm) lengths for about 75 mini gianduiotti; setting time unchanged.
Orange-zest version: process 1 tsp (2 g) finely grated orange zest with the hazelnut paste and sugar; method unchanged.
Molded version: pour the tempered gianduja straight into gianduiotto or small bar molds, tap to release air and let set 2 hours at cool room temperature before unmolding.
