Instructions

  1. Temper the egg yolk by whisking it with a small spoonful of warm milk from the 1/2 cup, then mix back into the remaining milk to safely incorporate it.
  2. Add the tempered milk mixture to a blender, followed by 2 cups vanilla ice cream.
  3. Add 1/2 tsp pure vanilla extract.
  4. Blend on low for 10 seconds, then on medium-high for 20–30 seconds, just until thick and smooth. Avoid overblending.
  5. Check consistency. Add 1 tablespoon milk at a time if too thick, or 1/4 cup additional ice cream if too thin.
  6. Pour into a chilled 16-ounce glass and top with 2 tbsp whipped cream and 1 tbsp graham cracker or pie-crust crumbs.
  7. Serve immediately with a wide straw and long spoon.

Tips

  • Use pasteurized egg yolk or egg yolk powder if concerned about raw eggs. Chill the glass beforehand to keep the milkshake cold longer.
