Instructions

  1. Wash, trim and prepare the dragon fruit; remove all pits, inedible skins and hard seeds.
  2. Combine dragon fruit, raspberry puree, chilled simple syrup and lemon juice in a high-speed blender.
  3. Add ice cubes; pulse 5 times and then blend in short bursts just until evenly slushy, not watery.
  4. Taste a small spoonful; adjust tartness or sweetness with small measured additions only after checking consistency.
  5. Divide between two freezer-chilled glasses; serve immediately with a wide straw or spoon.

Tips

  • Use frozen or well-chilled fruit; warm fruit melts the ice and dilutes flavor.
  • Serve immediately: slush separates and loses texture in storage.
  • Perishables must not sit at room temperature longer than 2 hours, or 1 hour above 90°F (32°C).
  • Good with cookies, cakes, and pastries.
