Instructions
- Toast the coconut flakes in a dry saucepan over medium-low heat, stirring constantly, until most are golden and fragrant, 3 to 5 minutes.
- Carefully pour in the water (it will sizzle), add the sugar and stir until the sugar dissolves.
- Bring to a simmer and cook gently for 5 minutes.
- Remove from the heat, cover and steep for 20 minutes.
- Strain through a fine-mesh sieve, pressing hard on the coconut to release the syrup; discard the flakes.
- Stir in the vanilla and salt, cool and refrigerate in a clean bottle.
Tips
- Flakes strain out more easily and taste better than shredded coconut.
- A thin layer of coconut oil may set on top in the fridge; shake the bottle or spoon it off.
