Baking tools for this recipe

Instructions

  1. Heat the oven to 325 F (165 C) with a rack in the lower third. Leave a 10-inch (25 cm) tube pan ungreased.
  2. Whisk the flour, 100 g sugar, baking powder and salt in a large bowl.
  3. In another bowl, whisk the yolks, oil, liquid and flavorings until smooth, then whisk into the dry ingredients to a smooth batter.
  4. Beat the whites and cream of tartar to soft peaks, then add the remaining 100 g sugar a spoonful at a time and beat to stiff, glossy peaks.
  5. Fold one-third of the meringue into the batter to lighten it, then gently fold in the rest in two additions until no streaks remain.
  6. Scrape into the pan and run a knife through to release big bubbles. Bake 50 to 60 minutes until springy and a pick comes out clean.
  7. Invert the pan over a bottle neck and cool completely, about 1.5 hours, then run a knife around the edges and tube to release.

Tips

  • Never grease the pan; the batter needs to climb the sides.
  • Any trace of yolk or fat in the whites will keep them from whipping.
  • Bake until the cake is fully set and springy; do not eat the batter raw because of the raw eggs.
