Instructions
- Line an 8-inch square pan with parchment, leaving an overhang on two sides.
- In a heavy saucepan, combine the condensed milk, chips, and salt. Stir over low heat until the chips melt and the mixture is smooth and thick, 5 to 7 minutes. Or microwave in 45-second bursts, stirring well each time.
- Remove from the heat and stir in the vanilla.
- Quickly fold in the roasted peanuts.
- Spread evenly in the pan.
- Refrigerate until firm, at least 2 hours. Lift out using the parchment and cut into 1-inch squares.
Tips
- Use chocolate chips or a good bar you like to eat; fudge made with candy coating tastes waxy.
- Vanilla swap: use vanilla bean paste 1:1 in place of the extract for visible specks, or the seeds of 1 vanilla bean for each tablespoon of extract.
- Best vanilla for this: Ugandan (bold, chocolatey, smoky), or Mexican (spiced, warm, woodsy). Any pure vanilla works.
- Storage: Store airtight in the refrigerator for up to 2 weeks or freeze for up to 3 months.
