Instructions
- Heat the filtered water to 175°F / 80°C for green, jasmine or white tea, or 200°F / 93°C for black, oolong and rooibos. If using matcha, whisk rather than steep; otherwise steep Earl Grey black tea for 3–5 minutes (2 minutes for white/green) and strain.
- Whisk in blueberry syrup until thoroughly dissolved.
- Warm the whole milk gently until steaming (not boiling); froth if desired.
- Divide the flavored infusion into two mugs, top with warm milk and vanilla, then stir and serve.
Tips
- Steeping green and white tea in boiling water can make the drink bitter; adjust for the product used.
- If fruit curd or acidic fruit syrup is present, blend it thoroughly or serve immediately to minimize dairy curdling.
- Perishables must not sit at room temperature longer than 2 hours, or 1 hour above 90°F (32°C).
- Good with cookies, cakes, and pastries.
