How to use it

How it works
A truffle is a small sphere: a classic 2.5 cm (1 in) truffle holds about 8 mL, or 10 g of ganache. Ganache weights include a few percent for the scoop and your hands, and the chocolate and cream use truffle-firm ratios (2:1 for dark chocolate).
Dipped truffles get a shell about 1 mm thick; you'll need to temper more chocolate than the shells use so there's enough to dip.
Assumptions and limits
- Ganache is about 1.2 g per mL.
- Coating amounts are generous for rolling.
Tips
- Chill the ganache until firm enough to scoop, about 2 hours.
- Wear gloves or cool your hands under cold water before rolling.
- Roll in cocoa straight after shaping so it sticks.
