  • ½ cup (120.0 ml)heavy cream
  • ⅛ tspfine sea salt
  • 1.0 tspVanillaGoods vanilla bean paste
  • ⅓ cup (40.0 g)confectioners' sugar, for rolling

Instructions

  1. Put the chocolate in a heatproof bowl.
  2. Heat the cream until it just simmers.
  3. Pour the hot cream over the chocolate and let stand for 3 minutes. Stir gently from the center out until smooth and glossy.
  4. Stir in the salt and vanilla bean paste.
  5. Cover and refrigerate until firm enough to scoop, about 2 hours (white chocolate ganache may need 4 hours).
  6. Scoop into 2-teaspoon portions and roll quickly between your palms into balls. If they get sticky, chill for 10 minutes.
  7. Roll in the confectioners' sugar to coat.
