Frozen Dessert Batch Size Calculator

Find how much mix your ice cream machine can churn at once, how many batches feed your crowd, and the vanilla bean ice cream, gelato, sorbet or frozen yogurt recipe scaled to one batch.

How to use it

  1. Choose your machine's capacity and what you're making.
  2. Enter the servings and serving size.
  3. Make the mix per batch, chill it overnight and churn batch by batch.

How it works

Machines are rated by the frozen dessert they make; the liquid mix should fill no more than about two-thirds of that, because air whipped in while churning (overrun) expands it. Home machines add about 20 to 30% air.

Each base recipe is scaled to the mix per batch: our vanilla bean ice cream, a fior di latte gelato, a fruit sorbet and a vanilla frozen yogurt.

Assumptions and limits

  • Overrun and capacity vary by machine; check your manual's maximum fill.
  • A serving is about ½ cup (one scoop).

Tips

  • Freeze a canister bowl for a full 24 hours before churning.
  • Chill the mix to 40°F (4°C) or colder; warm mix may never set.
  • Harden churned ice cream in the freezer 2 to 4 hours before scooping.

Why does my ice cream overflow the machine?
