Windowpane test

A simple check for well-kneaded bread dough: a small piece is stretched until it forms a thin, see-through membrane without tearing.

  • Techniques and preparation methods

Pinch off a small piece of dough about the size of a walnut. Gently stretch and turn it with your fingertips, pulling it thinner from the center. If the gluten is well developed, the dough stretches into a thin sheet that light shines through. If it tears before it thins, keep kneading for a few more minutes and test again.

The test is most useful for lean breads and rich doughs like brioche, which need strong gluten. Doughs made with whole grains or lots of fruit may never pass fully, since bran and add-ins cut the gluten.
