Sandwiching cookies
Joining two cookies with a layer of filling such as buttercream, ganache, jam or marshmallow to make a sandwich cookie.

- Techniques and preparation methods
Pairing cookies of the same size first gives neat results, especially for macarons and whoopie pies. A piping bag puts the same amount of filling on each cookie; pipe a dot or ring slightly smaller than the cookie and press gently so it spreads close to the edge.
The filling needs to be firm enough to hold the cookies in place. Soft fillings can be piped as a border of firmer frosting with jam in the center. Many sandwich cookies, including macarons, taste better after resting a day so the cookie softens slightly.
