Pulling sugar
Pulling sugar is the pastry technique of stretching and folding warm cooked sugar until it is smooth, pearly and shiny.

Also called: pulled sugar
Pulled sugar is used for decorative showpieces such as ribbons and flowers. The sugar is cooked and then heated until it is pliable and stretched repeatedly, which gives it a smooth, shiny surface. The repeated pulling is what creates the glossy finish.
Once it is pulled, the sugar is shaped by hand while still warm. Hollow pieces can be made by inflating pulled sugar, much as glass is blown, and the shape depends on how it is handled and supported.
The sugar hardens as it cools, so the worker moves quickly and reheats it under a lamp when it stiffens. Pulled sugar is one of several sugar-work methods taught in pastry programs.
