Panna cotta

An Italian dessert of sweetened cream gently set with gelatin, served chilled.

Panna cotta: a vanilla panna cotta unmolded onto a plate, smooth and gently wobbling, with a spoonful of red berry sauce

  • Italy (Piedmont)

The name means cooked cream. Cream, often with some milk, is warmed with sugar and vanilla, gelatin is dissolved in, and the mixture is poured into molds or glasses to set in the refrigerator. A good panna cotta just holds its shape and trembles when unmolded; too much gelatin makes it rubbery.

It is often served with fruit sauce, caramel or fresh berries. Agar can replace gelatin for a vegetarian version, though it sets more firmly.
