Large, crisp, hollow choux puffs split open and filled with a thick sour-cherry compote and a tall swirl of vanilla whipped cream, then capped and dusted with powdered sugar. The tart cherries against the sweet cream are the German café signature. Makes 12 pieces in about 3 hr 46 min.

Scales from a half to a double batch; give a bigger batch a little more time.
½ cup (125 ml)water
½ cup (125 ml)whole milk
½ cup (100 g)unsalted butter, diced
1 ¼ tsp (5 g)granulated sugar, for the choux pastry
¼ tsp (2 g)salt
1 ¼ cups (150 g)all-purpose flour, sifted
4(200 g)eggs, room temperature, lightly beaten
1 ½ cups (350 g)jarred sour cherries in juice, drained weight, juice reserved
⅔ cup (150 ml)reserved cherry juice
2 tbsp (25 g)granulated sugar, for the cherry compote
For the cherry compote, whisk 3 tbsp of the reserved cherry juice with the cornstarch. Bring the rest of the juice and the granulated sugar to a boil, whisk in the cornstarch mixture and boil until thick and clear, about 1 minute. Stir in the drained jarred sour cherries, chop them roughly in the pan with a spoon edge, then cool and refrigerate at least 30 minutes.
Preheat the oven to 400°F (200°C) and line two baking sheets with parchment paper.
Bring the water, whole milk, diced butter, 5 g sugar and salt to a full boil. Take off the heat, add the sifted all-purpose flour all at once and stir until smooth, then cook over medium-low heat, stirring, until the dough forms a ball and a thin film coats the pan, 1 to 2 minutes.
Transfer the dough to a bowl and let cool 5 minutes. Beat in the eggs a little at a time until the dough is glossy and falls from the spoon in a thick V-shaped ribbon; you may not need the last spoonful of egg.
Pipe or spoon 12 mounds about 2 inches (5 cm) wide onto the sheets, 2 inches (5 cm) apart, and smooth any points with a wet finger.
Bake one sheet at a time without opening the door for the first 20 minutes, until puffed, deep golden and dry-feeling, 25 to 30 minutes in total. Pierce the side of each puff with a skewer and return to the switched-off oven, door ajar, for 5 minutes to dry. Cool completely on a rack, about 20 minutes.
Whip the chilled heavy cream with the 40 g powdered sugar and the vanilla extract to firm peaks and spoon it into a piping bag with a large star tip.
Cut the top third off each puff. Spoon about 2 tablespoons of cherry compote into each base, pipe a tall swirl of cream on top, replace the lids and dust with the remaining powdered sugar. Serve within 2 hours.
Tips
Opening the oven early lets the steam out and the puffs collapse; wait until they are deep golden and firm.
Dry the puffs well after baking so they stay crisp under the cream.
Fill only shortly before serving; filled choux softens within a few hours.
Keep cream-filled puffs refrigerated and serve within 2 hours of filling.

How long does it take to make windbeutel (german cream puffs with sour cherries)?
Plan on 45 minutes of prep and 2 hours of cooking, plus 1 hour 1 minutes to chill and rest. The recipe makes 12 pieces.
How should I store windbeutel (german cream puffs with sour cherries)?
Unfilled puffs keep in an airtight tin for 1 day or frozen for 1 month (re-crisp 5 minutes at 350°F / 175°C). Filled Windbeutel must be refrigerated and eaten the same day.
Can I make windbeutel (german cream puffs with sour cherries) ahead?
It is at its best the day it is made; prepare it a few hours before serving.
Can I use a different form of vanilla?
Yes. This recipe uses 1 tsp vanilla extract (5 ml). Each teaspoon of pure vanilla extract can be swapped for 1 teaspoon of vanilla bean paste, the seeds of half a vanilla bean, or 1/2 teaspoon of vanilla powder. Paste and seeds add the classic dark specks.
Serve it with black coffee.
Variations
Cinnamon-sugar: dust the filled puffs with 1 tbsp (12 g) sugar mixed with 1/2 tsp (1 g) ground cinnamon instead of powdered sugar.
Mini portions: pipe 1-inch (2.5 cm) mounds and bake 18 to 22 minutes; makes about 30 small puffs.
Orange-zest cream: whip 1 tsp (2 g) finely grated orange zest into the cream and skip the cherries.
Chocolate tops: dip the lids in 3.5 oz (100 g) melted dark chocolate and let set before assembling.
