Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  2. Make the flax eggs: stir 3 tablespoons of ground flaxseed with 9 tablespoons of water and let it sit for 5 minutes, until thick and gel-like.
  3. Cream the softened butter and sugar with a mixer until light and fluffy, about 3 minutes, then beat in the vanilla.
  4. Dissolve the espresso powder in 1 teaspoon of warm water, then beat it into the butter mixture.
  5. Add the flax eggs one at a time, beating well after each addition so the batter stays smooth.
  6. Whisk the flour, baking powder, and salt together, then add to the batter in three additions, alternating with the milk and mixing just until combined.
  7. Divide the batter between the prepared pans and bake at 350°F (175°C) for 28 to 32 minutes, until the tops spring back when lightly pressed and a tester comes out clean.
