Instructions

  1. Heat the oven to 350°F (175°C). Grease two 8-inch round cake pans, line the bottoms with parchment, and grease the parchment.
  2. Beat the butter and sugar on medium-high speed for 3 to 4 minutes. The mixture should be pale, fluffy, and visibly increased in volume.
  3. Beat in the eggs one at a time, mixing well after each addition. Mix in the vanilla. If the batter begins to look curdled, add a spoonful of the measured flour.
  4. Whisk the flour, baking powder, and salt together. Add the dry ingredients in three additions, alternating with the milk in two additions, beginning and ending with the flour. Before mixing the batter, toss the patted-dry peaches with 1 tablespoon of the measured flour; this helps control surface moisture and fruit sinking. Fold the flour-coated peaches into the finished batter with a flexible spatula using as few strokes as possible. Mix on low and stop as soon as the batter is smooth.
  5. Divide the batter evenly between the pans and smooth the tops. Bake for 28 to 32 minutes. The cakes are done when the tops spring back lightly and a tester inserted near the center comes out clean or with a few moist crumbs.
  6. Cool the cakes in the pans for 10 minutes, then turn them onto a rack and let them cool completely before filling or frosting.
