Instructions

  1. Brew the espresso. In a large mug, stir the cocoa powder and sugar with about 1 tablespoon (15 ml) of the hot espresso until a smooth paste forms, then stir in the remaining espresso and vanilla. The cocoa mixture should look smooth and glossy before the remaining espresso is added.
  2. Steam the milk until it reaches about 150°F to 155°F (65°C to 68°C), creating a fine, glossy foam. The pitcher should feel hot but the milk should not smell cooked.
  3. Pour the steamed milk into the espresso, holding back the foam at first, then spoon or pour the foam over the top. Serve immediately while the milk is silky and the espresso is aromatic.

  • Vanilla bean paste swaps 1:1 for the extract and adds visible vanilla seeds; for a whole bean, use the seeds of 1 bean in place of 2 teaspoons of extract.
