Instructions

  1. Brew 1 shot (about 1 oz/30 ml) of espresso and let it cool slightly.
  2. Add 1/2 cup whole milk, 2 cups vanilla ice cream, 1/2 tsp pure vanilla extract, and the espresso shot to a blender.
  3. Blend on low for 10 seconds, then on medium-high for 20–30 seconds, just until thick and smooth. Avoid overblending.
  4. Check consistency. Add 1 tablespoon milk at a time if too thick, or 1/4 cup additional ice cream if too thin.
  5. Pour into a chilled 16-ounce glass and top with 2 tbsp whipped cream.
  6. Serve immediately with a wide straw and long spoon.

Tips

  • Make sure the espresso is slightly cooled before blending to avoid melting the ice cream too quickly. You can substitute cold brewed coffee for espresso, but reduce milk to balance texture.
