Til pitha are slim rolls of sticky rice flour cooked into a thin, pale sheet on a hot pan and wrapped around crushed roasted black sesame and jaggery. There is no batter: the damp, freshly ground flour fuses into a chewy, lightly crisp wrapper the moment it hits the heat. Makes 14 pieces in about 7 hr 40 min.

Scales from a half to a double batch; give a bigger batch a little more time.
10 ½ oz (300 g)glutinous rice (bora saul), or other sticky rice
Rinse the glutinous rice (bora saul) and soak it in water for at least 6 hours or overnight. Drain it in a colander for 30 minutes, until no water drips but the grains are still damp.
Grind the damp rice with the salt in small batches in a dry grinder to a fine, slightly moist flour, then sift it. It should hold its shape when squeezed in your fist and crumble when pressed. Keep it in a covered container under a damp cloth so it does not dry out.
Make the filling: toast the black sesame seeds in a dry pan over medium-low heat, stirring, until they crackle and smell nutty, 3 to 4 minutes. Cool for 10 minutes, then grind them coarsely and mix with the finely grated jaggery until the mixture clumps together.
Heat the cast-iron tawa over medium-low heat until you can feel the warmth with your palm about 6 inches (15 cm) above it, about 5 minutes. Do not grease it.
Sprinkle about 2 tbsp (25 g) of the rice flour on the tawa in an oval about 5 by 3 inches (13 by 8 cm) and press it lightly with your fingertips or the back of a spoon into an even, thin layer.
Within 30 to 60 seconds the flour fuses into a pale sheet that holds together. Spoon about 1 tbsp of the filling in a line down the center.
Using a thin spatula, lift one long edge and roll the sheet into a cylinder around the filling, pressing the ends lightly. Push it to the cooler edge of the tawa for 30 seconds to firm up while you start the next one; the sheet should stay pale, with no browning.
Cool the til pitha on a plate for at least 15 minutes; they turn crisper as they cool.
Tips
Bora saul is sold in Assamese and Northeast Indian shops; Thai or Japanese sweet (glutinous) rice works the same way.
If you use store-bought glutinous rice flour instead of soaked rice, rub in about 3 to 4 tbsp (45 to 60 ml) water per 300 g flour until it feels like damp sand.
If the sheet browns before it binds, lower the heat; if it crumbles, the flour is too dry, so sprinkle it with a few drops of water.
Good with assam tea with milk.

Til pitha is the signature sweet of Magh (Bhogali) Bihu, the January harvest festival of Assam, made by pressing damp flour from soaked bora saul (sticky rice) into a thin sheet on a hot iron pan and rolling it around roasted black sesame and jaggery. Serve it with assam tea with milk.
Variations
Narikol (coconut) filling: replace the sesame filling with 120 g (1 1/3 cups) fresh grated coconut cooked with 80 g (1/2 cup) grated jaggery over medium-low heat until dry and sticky, 6 to 8 minutes; cool before filling.
Toasted coconut and sesame: mix 20 g (1/4 cup) desiccated coconut, toasted golden in a dry pan for 2 minutes, into the sesame filling; cook time unchanged.
Half-moon shape: fold each sheet over the filling into a half-moon instead of rolling it, pressing the edge lightly with the spatula; cook time unchanged.
