A thin, buttery yeast-dough base carries a deep layer of cooked ground poppy seed with semolina, raisins and almonds, all capped with a soft vanilla custard lightened with beaten egg whites. It bakes into dark, moist poppy seed under a pale golden top, a fixture of Thuringian coffee tables. Makes 15 pieces in about 5 hr 21 min.

Scales from a half to a double batch; give a bigger batch a little more time.
1 ⅔ cups (200 g)all-purpose flour
¼ oz (4 g)instant yeast
⅓ cup (80 ml)whole milk, lukewarm, for the dough
¼ cup (50 g)granulated sugar, for the dough
¼ cup (60 g)unsalted butter, melted and cooled, for the dough
1(50 g)egg, room temperature
1 pinchsalt, for the dough
1 ½ cups (350 ml)whole milk, for the poppy seed filling
⅓ cup (75 g)unsalted butter, for the poppy seed filling
½ cup (100 g)granulated sugar, for the poppy seed filling
1 oz (35 g)fine semolina (durum wheat)
10 ½ oz (300 g)ground poppy seed
½ cup (75 g)raisins, rinsed and patted dry
⅔ cup (75 g)chopped blanched almonds
1 pinchsalt, for the poppy seed filling
1 cup (250 ml)whole milk, for the custard topping
¼ cup (50 g)granulated sugar, for the custard topping
2 ½ tbsp (20 g)cornstarch
2 tbsp (30 g)unsalted butter, for the custard topping
For the dough, mix the all-purpose flour, instant yeast, 50 g granulated sugar and salt in a bowl. Add the lukewarm whole milk, the cooled melted butter and the egg and knead by hand or with dough hooks until smooth, soft and slightly sticky, about 5 minutes. Cover and let rise in a warm place until doubled, about 1 hour.
While the dough rises, make the custard topping: whisk 3 tbsp of the 250 ml milk with the cornstarch until smooth. Bring the rest of that milk, the 50 g sugar and the 30 g butter to a boil, whisk in the cornstarch mixture and boil, whisking, until thick, about 1 minute. Stir in the vanilla extract, press plastic wrap on the surface and cool completely, about 1 hour.
For the poppy seed filling, bring the 350 ml milk, 75 g butter and 100 g sugar to a simmer. Whisk in the semolina, ground poppy seed and salt and cook over low heat, stirring constantly, until thick and spreadable, about 5 minutes. Stir in the raisins and chopped blanched almonds and let cool until lukewarm, about 30 minutes.
Grease the baking pan with butter. On a lightly floured surface, roll the risen dough into a 9 x 13-inch (23 x 33 cm) rectangle and press it into the pan, pushing it slightly up the sides.
Spread the lukewarm poppy seed filling evenly over the dough and let it stand 20 minutes while you preheat the oven to 350°F (175°C).
Whisk the 2 egg yolks into the cooled custard until smooth. Whip the 2 egg whites to stiff peaks and fold them gently into the custard. Spread the custard over the poppy seed layer right to the edges.
Bake on the middle rack until the top is set and pale golden and the edge of the base is browned, 40 to 45 minutes. Cover loosely with parchment if the top colors too quickly.
Cool completely in the pan on a rack, about 1 hour, then dust with the powdered sugar and cut into 15 pieces.
Tips
Buy poppy seed already ground for baking, or grind whole poppy seed in a dedicated spice grinder; whole seeds will not give the creamy filling.
Let the poppy filling cool to lukewarm before spreading so it does not melt the butter in the dough.
The custard topping settles as it cools, so wait until the cake is fully cool before cutting clean squares.
The topping contains raw egg folded into the custard; bake until it is fully set (160°F / 71°C) and refrigerate leftovers.

How long does it take to make thüringer mohnkuchen (thuringian poppy seed sheet cake)?
Plan on 45 minutes of prep and 45 minutes of cooking, plus 3 hours 51 minutes to rise and rest. The recipe makes 15 pieces.
How should I store thüringer mohnkuchen (thuringian poppy seed sheet cake)?
Because of the custard topping, cover and refrigerate for up to 3 days; let pieces come to room temperature for 20 minutes before serving. Freeze pieces up to 1 month.
Can I make thüringer mohnkuchen (thuringian poppy seed sheet cake) ahead?
It is at its best the day it is made; prepare it a few hours before serving.
Can I use a different form of vanilla?
Yes. This recipe uses 1 tsp vanilla extract (5 ml). Each teaspoon of pure vanilla extract can be swapped for 1 teaspoon of vanilla bean paste, the seeds of half a vanilla bean, or 1/2 teaspoon of vanilla powder. Paste and seeds add the classic dark specks.
In Thuringia, Mohnkuchen is baked on the sheet pan: a thin sweet yeast base under a thick cooked poppy seed filling, often finished with a light custard layer or an egg topping. Serve it with filter coffee.
Variations
Orange-zest version: stir 2 tsp (4 g) finely grated orange zest into the poppy seed filling with the raisins; bake time unchanged.
Streusel top: skip the custard topping and scatter a streusel of 1 cup (125 g) flour, 1/3 cup (75 g) sugar and 6 tbsp (75 g) cold butter over the poppy layer; bake 35 to 40 minutes.
Individual portions: bake in a greased 12-cup muffin pan, pressing a round of dough into each cup and filling with poppy seed and custard; bake 22 to 25 minutes.
Sour cream finish: serve each piece with 1 tbsp (15 g) Schmand or sour cream on the side, as many Thuringian cafés do.
