Instructions

  1. In a large bowl, combine the all-purpose flour and salt. Add the neutral oil and warm water, mixing to form a soft, elastic dough.
  2. Turn the dough onto a lightly floured surface and knead for about 8 minutes until smooth and elastic.
  3. Shape the dough into a ball, lightly oil it, cover with plastic wrap, and let rest for 30 minutes at room temperature to relax the gluten.
  4. Meanwhile, prepare the filling: in a medium bowl, mix the farmer cheese, granulated sugar, egg, and pure vanilla extract until smooth and creamy. Stir in the raisins.
  5. Toast the breadcrumbs in 2 tablespoons of the melted butter over medium heat until golden and fragrant; let cool.
  6. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  7. On a clean, large linen cloth or floured cloth, roll out the dough into a large, thin rectangle about 18x24 inches. Then, gently stretch the dough with your hands from the center outward until it is paper thin and you can almost see through it without tearing.
  8. Brush the entire surface of the stretched dough lightly with 2 tablespoons of melted butter to keep it moist and flavor the crust.
  9. Evenly sprinkle the toasted breadcrumbs over the dough, leaving a 2-inch border along all edges to prevent sogginess during baking.
  10. Spread the cheese and raisin filling evenly over the breadcrumbs.
  11. Carefully roll the dough tightly from one of the short ends, using the cloth to help lift and roll, to form a long strudel log. Tuck the ends under to seal.
  12. Transfer the rolled strudel carefully to the prepared baking sheet, seam side down.
  13. Brush the surface of the strudel with a little melted butter for a golden crust.
  14. Bake for 35 to 40 minutes until the strudel is golden brown and crisp.
  15. Remove from the oven and let rest on a wire rack for 10 minutes before slicing and serving warm or at room temperature.

Tips

  • When stretching the dough, keep your hands lightly floured and work gently to avoid tearing the delicate dough.
  • Use real farmer cheese or well-drained ricotta for best texture and flavor; if too wet, strain it in a fine sieve for 10 minutes.
