Sunnundalu are laddus made from slowly roasted urad dal, ground to a fine flour with jaggery and cardamom and pressed together with hot ghee. Thorough roasting gives them a deep, nutty flavor and a powdery texture that melts in the mouth. Makes 16 laddus in about 1 hr 1 min.

Scales from a half to a double batch; give a bigger batch a little more time.
7 oz (200 g)whole skinned urad dal, white, picked over
Roast the whole skinned urad dal in a dry, heavy pan over medium-low heat, stirring constantly, until evenly light golden and strongly fragrant and a grain crushes easily between your teeth, 12 to 15 minutes.
Spread the dal on a plate and cool completely, about 15 minutes.
Grind the cooled dal in a dry grinder to a fine powder, about 1 minute in bursts. Add the jaggery and ground cardamom and grind again until evenly blended, about 30 seconds. Tip into a wide bowl.
Heat the ghee in a small pan until hot and melted but not smoking, about 1 minute.
Pour three-quarters of the hot ghee over the dal mixture and mix with a spoon until it looks like damp sand. Add the rest only if a pinch does not hold together when squeezed.
While the mixture is warm, take about 30 g at a time and press firmly in your palm into 16 smooth, round laddus.
Let the laddus cool and firm on a plate at room temperature, about 15 minutes, before storing.
Tips
Under-roasted urad dal tastes raw and is hard to digest; keep going until the whole batch smells nutty and toasty.
Grind the jaggery with the dal so no lumps remain; lumpy jaggery makes laddus crack.
If the laddus slump, the mixture is too warm or too oily; let it cool 5 minutes and press again.
Good with filter coffee.
