Instructions

  1. In a stand mixer bowl, whisk the confectioners' sugar, meringue powder, and freeze-dried strawberry powder.
  2. Add the water and vanilla. Beat with the paddle on low speed until the icing is matte and holds stiff peaks, 7 to 10 minutes.
  3. For outlining, use it as is or add water 1/2 teaspoon at a time until it holds a soft peak. For flooding, thin a portion until a ribbon drizzled on the surface disappears in about 10 to 15 seconds.
  4. Keep the surface covered with plastic wrap or a damp towel while you work so it doesn't crust.
  5. Let decorated cookies dry uncovered at room temperature until completely hard, at least 8 hours or overnight.

Tips

  • No freeze-dried fruit powder? Grind freeze-dried fruit to a fine powder in a blender, then sift out the seeds.
  • Grease breaks down royal icing, so use grease-free bowls and tools, and avoid oil-based flavorings.
  • Zest and ground spices can clog fine tips; use a #3 tip or larger, or strain the icing.
