Instructions

  1. Put 1/2 cup whole milk into a blender, then add 2 cups vanilla ice cream.
  2. Add 1/2 cup frozen strawberries and 1/4 cup rhubarb compote or stewed rhubarb, along with 1/2 tsp pure vanilla extract.
  3. Blend on low for 10 seconds, then medium-high for 20–30 seconds, until smooth and thick. Avoid overblending.
  4. If too thick, add 1 tablespoon milk at a time; if too thin, add 1/4 cup additional ice cream and blend briefly.
  5. Pour into a chilled 16-ounce glass, top with 2 tbsp whipped cream and sprinkle 1 tbsp graham cracker or pie-crust crumbs on top.
  6. Serve immediately with a wide straw and long spoon.

Tips

  • Use prepared rhubarb compote to add authentic tartness; fresh rhubarb can be stewed with sugar if compote is unavailable. For a thicker shake, freeze strawberries before blending.
