Instructions
- In a medium bowl, whisk together the all-purpose flour, granulated sugar, and fine sea salt.
- In another bowl, beat the eggs, whole milk, melted butter, and 1 tsp pure vanilla extract until combined.
- Gradually pour the wet ingredients into the dry ingredients, whisking continuously until the batter is smooth and free of lumps.
- Heat a nonstick 8-inch skillet over medium heat and lightly grease with butter or oil.
- Pour about 1/4 cup (60 ml) of batter into the skillet, swirling to evenly coat the bottom. Cook 1-2 minutes until edges start to lift and bottom is golden, then flip and cook another 30 seconds. Transfer cooked crêpe to a plate. Repeat with remaining batter, stacking crêpes with parchment paper in between.
- To make the mixed berry compote, place the mixed berries, 2 tbsp granulated sugar, fresh lemon juice, and 1 tsp pure vanilla extract in a small saucepan over medium heat.
- Cook, stirring occasionally, until the berries soften and release juices, about 8-10 minutes, until slightly thickened. Remove from heat and let cool slightly.
- To serve, spoon the warm mixed berry compote onto each crêpe, fold or roll, and garnish with additional fresh berries if desired.
Tips
- For smooth crêpe batter, let it rest 10-15 minutes before cooking to relax the gluten and avoid breakage.
- Using pure vanilla extract in both batter and compote deepens the flavor and adds warmth to the berries.
